Patisserie ♦

昨天 (8.5.12)
上了甜品课
今天chef zaihan教pudding

做了3种
一个是
Bread and Butter Pudding



Ingredient

4 number of eggs (grade B)
100g castor sugar
500g/500ml fresh milk
5 pieces sandwich loaf

Step
  1. Preheat the oven 160°C.
  2. Add in egg and sugar, whisk it and then add in milk.
  3. Cut sandwich loaf in 4 pieces, arrange it in a container.
  4. Pour in the mixture, put a side.
  5. Bake the pudding with 160°C within 40minute.
Vanilla Sauce

300g fresh milk
60g castor sugar
150g custard powder
60g heavy cream
2 tsp of vanilla essence

step

  1. Heat up the mixture of fresh milk and castor sugar.
  2. Whisk the custard powder and heavy cream and vanilla
  3. Mix up all.
  4. Apply it on the pudding.



看起来很好吃叻?
可是我不爱
因为我接受不到那个蛋和奶的腥味

第二个是Cream caramel


Ingredient 1

 100g castor sugar

Step

  1. Add a little bit of water inside a pot with the sugar.
  2. Heat it up until the sugar liquid turn gold brown colour
  3. Remove it from the fire and quickly pour it into the matrix.

Ingredient 2 (Batter)

250g fresh milk
50g castor sugar
1tsp/5g of vanilla essence

Step

  1. Heat up the fresh milk, sugar and vanilla essence.
  2. Leave it to cold and add in the eggs.
  3. Pour the liquid inside the matrix that contain the sugar.
  4. Baked it for 35minute.
  5. Leave it cold and put it into refrigerator.

油腻到

Panna Cotta

Ingredient 


125ml Heavy Cream
14g castor sugar
1g Gelatine
5g cold water
1/2 tsp vanilla essence

  1. Heat up the heavy cream and castor sugar.
  2. Then double boil the gelatine, add in vanilla essence and pour into the mixture.
  3. Mix well and pour it into matrix. Keep in refrigerator as well.

腻死人了

比昨天的好吃得多!
